Yolky, Raw Milk Ice Cream
Ingredients:
1 cup raw cream
1 1/2 cups raw milk
2 tsp vanilla
1/2 cup maple syrup
4 egg yolks
From the cabinet:
Ice cream maker
Mixing bowl
Whisk
Spatula/large spoon
How to Prepare:
First, you must freeze the bowl of your ice cream maker. Each is different, so check the instructions. My ice cream maker takes 17-24 hours to freeze. Best practice: always keep the bowl in the freezer. You never know when you might need to make some emergency ice cream!
Combine all ingredients in a mixing bowl with a whisk. Plug in your ice cream maker. Take ice cream bowl out of the freezer. Use a big spoon or spatula to pour contents of the mixing bowl into the frozen ice cream bowl.
Immediately assemble the ice cream bowl on the ice cream maker. Turn on the ice cream maker. All machines are different, but mine suggests 15-20 minutes of mixing. I kept my machine on for 20 minutes. For this recipe, choose the longer end of your machine’s range.
After mixing, scoop ice cream into a freezer safe dish with a lid. Place ice cream in the freezer for an additional 15 minutes.
Take the ice cream out of the freezer, scoop into a mug or bowl, and enjoy! If you want toppings, it’s especially delicious with olive oil and Maldon salt.
When to Make Ice Cream
My husband got me a perfect birthday present this year—an ice cream maker. His research found the Cuisinart to be a fan favorite. This one was also highly rated, but $500.
On the day I made this ice cream, I had a million things to do and desperately wanted one hour to myself. Try as I might, my son refused to nap. Maybe he didn’t want to sleep, but he did want to be held. All. Day. Long.
By 3pm back was hurting and I was counting the hours until dad was home. Then I remembered—dad had a work dinner. This day was what I like to call a Fire Station Day. I was exhausted, overwhelmed, and just about ready to drop my kid off at the fire station.
Of course I’m kidding, but every parent has moments when you want to give up. In my experience, the only way out of these moments is to surrender your expectations. On this day surrendering meant pushing my to-do list to the side, perching Rex on his toddler tower, and making ice cream together.
I looked up “simple ice-cream recipe” and then decided to do my own thing. More milk, less cream, and lots of egg yolks. My back got a much deserved break as I distracted Rex by giving him licks of heavy cream and mixing bowls to bang on the countertop. And I got a delicious, homemade, silly little treat.
It was so delicious, I decided to write my bastardized recipe down so I could share it here. Enjoy!
